3 eggs
1 cup oil
1 1/2 to 2 cups sugar
2 or 3 cups raw zucchini
2 cups flour
1/4 tsp baking powder
2 tsp baking soda
1 tsp salt
3 tsp cinnamon
3 tsp vanilla
1 cup chopped nuts-optional
Do not peel zucchini, just grate it coasrely.
Beat eggs til light and fluffy, add sugar, oil, vanilla and blend well.
Stir in zucchini.
Sift dry ingredients. Blend with creamed ingredients, fold in nuts.
Bake in 2 greased and floured 9x5" loaf pans for 1 hour at 360 degrees.
