Mexican Chicken Casserole

Meal-in-a-skillet recipes are perfect for small RV kitchens. And every dish not used is one less to wash!

1 lb. chicken, boneless, cut up
1 small chopped onion
1 can tomato with green chiles
1/2 cup baby carrots
1 cream of chicken soup
1 cup grated cheddar cheese

Cook chicken with onion in skillet in small amount of oil. Add tomatoes with green chiles, carrots, and soup. Cover and cook about an hour on low. Sprinkle cheese on top, let melt and serve.
