Those who share my disinclination to cook will be as surprised as Mr. B when I volunteered to prepare dinner.
It was the sweet potato that did it. There was a half of one sitting on the refrigerator shelf, just waiting to be used.
You probably know by now that when Mari cooks, it is either stuff thrown into a crockpot early in the day, or stuff thrown into a skillet about dinner time.
This time it was the skillet. There was one small chicken breast in the freezer and that sweet potato. I grabbed some fresh broccoli, a couple green onions, garlic. There was some fresh ginger in the crisper drawer, too. That cinched it. Stir Fry! (We use the term "Stir Fry" loosely as you will see.)
This is what happened:
A couple tablespoons olive oil in the skillet. Throw in a couple diced cloves of garlic. Medium high heat.
A slice of fresh ginger about as big around and as thick as a half-dollar. Slivered. (I like to keep the pieces big enough to see because although I love the flavor fresh ginger gives to the dish, I don't like to bite into it.)
Slice the chicken breast across the grain; throw that in with the garlic to start cooking.
That chicken breast was a bit small to provide enough protein for two; rinse 1/3 cup lentils and toss them in with the chicken.
Add the sliced green onion. Stir it around and let everything sizzle while you chop up the other vegetables.
Broccoli- just the heads, about two cups in bite size pieces.
Sweet potato- about three inches of the huge thing, peeled and chunked. About a cup and a half.
A few baby carrots because they fell out of the bag.
Toss in the vegetables. Stir every thing together. The chicken should be partially cooked, the lentils should be browned and the vegetables beginning to cook.
Pour in a cup and a half of chicken broth. (A little less than a can.) Put the lid on, reduce the heat to a simmer. Cook until the chicken is fork-tender, the lentils tender but not mushy and the vegetables are cooked.
This dish turned out to be very "repeatable", as Mr. B says. I named it "Lentil Chicken Stir Fry". It was delicious. I was so pleased!
