Basil-Tomato on French Bread

6 Roma tomatos, seeded and diced small
2 large cloves of garlic or to taste
1/4 cup olive oil
1/2 cup freshly chopped basil
1 8oz package Feta cheese
Salt and pepper to taste

1 loaf french or italian bread cut into 1 inch slices

Spread bread slices out on a cookie sheet and slide under the broiler, just until tops are just lightly crisp. Turn over and toast the other side. (2-4 minutes a side.) Watch closely!

Remove from oven.

Reduce heat to 375.

Combine other ingredients and stir well.

Top bread with tomato mixture and bake for 10 - 15 minutes, depending on your oven.

Feta doesn't necessarily melt, but will toast, so watch it closely. You want a light brown color on the edges of the cheese.
